A long cultural tradition of Salta is the Pena, or a good old traditional sing-song. If you want a cheesy performance version, there are any number of places just north of the city centre. But you might not want to bother that much.
If you want the real deal, you need to jump in a cab a few KMs west of the city centre and head to La Casona de Molino. Not only was the parilla (bbq) steak I had amazing, the whole atmosphere was that of a community gathering and seemed to be largely a local affair. More fun than sinking a bottle of Malbec and humming along incomrephensibly.... well, about as much fun, as I think that's what happened.
